Iroquois Roasted White Corn Flour

 

We roast our whole corn until it becomes a rich brown color, imparting a nutty flavor and preserving the whole grain. We then stone grind it into a medium-grind flour suitable for use in breads, muffins, pancakes or in any recipe calling for regular corn meal or flour. It also works very well as a coating for chicken or fish fillets. We especially like it in our much-loved Cornmeal Cookies.

Iroquois White Corn Flour

The corn is prepared, dried and stone-ground into a medium to fine grind flour suitable for any recipe using regular corn meal or corn flour, gluten-free flour, breads, muffins, pancakes, granola bars, hush puppies and more. Also used as a tasty and nutritious thickener.

Iroquois Hulled White Corn

Our whole kernel corn is washed or cooked in hardwood ash or lime water to remove the hull from each kernel. It is then dehydrated and packaged. When cooked, each kernel expands to approximately four times its original size, so one bag of this corn is like buying four! Its texture holds up and does not become mushy when cooked. Perfect for traditional corn soup, it also mixes beautifully to any soup, chowder, chili, summer salads, stews, casseroles, salsas, or any other recipe where you would use whole hominy or any beans. One bag of uncooked hulled corn yields 14-18 servings.
